Nuts Aided Diabetes Control and More

Two clinical trials found new benefits for blood sugar and fats, inflammation, mood, and appetite

by Craig Weatherby

One of the pitfalls of nutritional guidance is reductionism … the propensity, in the face of inconvenient complexity, to oversimplify the health effects of a food or nutrient.

For example, Americans consume far too many omega-6 fatty acids in relation to omega-3 fats. People should consume the two types in roughly equal proportions, but most get 15-20 times more omega-6 fat than omega-3 fat.

This common “omega imbalance” promotes chronic inflammation and the degenerative conditions driven by it, including diabetes and cardiovascular disease. (See “America’s Sickening Omega Imbalance”.)

Nuts and seeds are high in omega-6 fatty acids, with only flax and hemp seed providing substantial amounts of omega-3s relative to omega-6s. Walnuts rank high among plant sources of omega-3s, but

Coral Creatures Show Their True Colors

Scientists’ slide show features a stunning array of eye-popping, coral-dwelling crustaceans

by Craig Weatherby

We came across a gorgeous slide show ... one that reveals an amazing range of otherworldly beauty among coral-dwelling crustaceans.

A third to a quarter of all ocean species live in or around corals. As the Discovery.com page hosting the show says, coral reefs “… are often called the rainforests of the sea because they are so packed full of diversity.”

The slide show flows from a new study on shrimp, crabs and other crustaceans, which suggests that reefs are ...

Fisherman Fights Alaska Mine with Facts

By citing the plain facts, an exacting essay exposes the folly of a massive mine near major salmon rivers

by Craig Weatherby

The sorry history of North American hard-rock mining and the particulars of the planned Pebble Mine lead us to oppose this ill-conceived, multi-billion-dollar project.

The Pebble Mine is proposed for the headwaters of Bristol Bay, which hosts the world’s biggest salmon runs. Since 2005, we’ve been covering the fight to stop this enormous gold and copper mine … see the “Mining & Seafood Sustainability” section of our news archive.

We just found one of the strongest and most succinct anti-Pebble arguments to date, in the form of a blog post by Bristol Bay salmon fisherman Brett Veerhusen.

On behalf of all lovers of wild salmon – and the local people, ecosystem, and cultures that rely on these magnificent ...

Baked Garlic-Dill Fish Sticks

by Teri Tsang Barrett

Today’s recipe comes to us from culinary pro and regularVital Choices contributor Teri Tsang Barrett.

She's former Senior Food Editor of “Every Day with Rachel Ray” magazine, and a graduate of the Institute of Culinary Education.

Teri adds this tip: “Because these fish sticks are baked, they won’t brown the way their fried counterparts will. For a darker crust, spray the fish sticks with olive oil just before baking.”

Serves 4

1 cup canola or olive oil ...

Fishy Maternal Diets May Aid Fetal Immunity

Maternal diets rich in salmon optimized umbilical cord cells’ immune responses to bacteria, including reduced inflammation

by Craig Weatherby

We don’t usually report on studies before they are published in a peer-reviewed journal, and take industry-funded research with a grain of salt.

But the results of a novel study in pregnant women – funded by yogurt maker Danone – have been accepted for publication by the respected American Journal of Clinical Nutrition.

In addition, lead author Eline M. van der Beek, Ph.D., is a former assistant professor at Holland’s widely respected Wageningen University.

And she co-authored a study with highly respected British fatty acid expert Philip Calder, Ph.D., earlier this year, showing that mice fed omega-3-rich diets in infancy enjoyed enhanced immune ...

B Vitamins or Meditation Ease Workers’ Stress

Clinical trials show that either a high-dose B vitamin supplement or meditation can significantly reduce work-related stress

by Craig Weatherby

Click for full story and link to printer friendly version

The normal challenges of daily living keep us alert, and can actually improve mood and performance.

However, excessive or chronic stress can lead to over-activity of the body's hormonal stress-response systems.

When these systems are working normally, they normalize sleep, appetite, energy, and sex drive, and promote healthy mood.

Sustained stress elevates levels of cortisol, the so-called “death hormone”. This imbalance alters levels of neurotransmitters in the brain and literally shrinks the hippocampus region, which plays a key role in memory and ...
